Prepare the Paneer
Cut the cottage cheese (paneer) into cubes and set aside.

Chop the Vegetables
Finely chop the onion and tomato. Slice the bell peppers into thin strips.

Prepare the Spices
Lightly pound the coriander seeds and red chilies using a mortar and pestle or a spice grinder.
Cooking

Heat Oil
In a kadhai or a large pan, heat the oil over medium heat.

Sauté Onions
Add the chopped onions to the hot oil and sauté until they turn translucent.

Add Tomatoes
Add the chopped tomatoes to the pan and cook until they soften.

Add Bell Peppers
Stir in the sliced bell peppers and cook for 3-4 minutes until they start to soften.

Add Spices
Add the pounded coriander seeds, red chilies, turmeric powder, garam masala, and salt. Mix well to coat the vegetables with the spices.

Add Paneer
Gently fold in the paneer cubes, ensuring they are well coated with the spices and vegetables. Cook for another 2-3 minutes.

Garnish and Serve
Remove from heat, garnish with fresh cilantro, and serve hot with naan or rice.
