Prepare the Peppers
Wash the fresh red chili peppers thoroughly under running water. Remove the stems and slice them in half lengthwise. If you prefer a milder sauce, you can remove the seeds.

Prepare the Garlic
Peel the garlic cloves and set them aside. If you want a stronger garlic flavor, you can crush them lightly with the flat side of a knife.

If using, chop the onion into small pieces and set aside. Measure out the lime juice and smoked paprika if desired.

In a medium saucepan, combine the prepared chili peppers, garlic cloves, white vinegar, salt, and sugar. If using, also add the chopped onion, lime juice, and smoked paprika.

Remove the saucepan from heat and let it cool slightly. Transfer the mixture to a blender or food processor and blend until smooth. Be careful when blending hot liquids; you may want to let it cool completely or blend in small batches.

If you prefer a smoother hot sauce, you can strain the blended mixture through a fine mesh sieve to remove any solids.
