    Prepare the Cauliflower

    Cut the cauliflower into bite-sized florets. Rinse them thoroughly under cold water and drain.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, rice flour, baking powder, and salt. Gradually add water to form a smooth batter that can coat the cauliflower.

    Heat the Oil

    In a deep frying pan, heat the oil over medium heat until it reaches 350°F (175°C) or until a small drop of batter sizzles when dropped into the oil.

    Fry the Cauliflower

    Dip each cauliflower floret into the batter, ensuring it is well coated. Carefully drop them into the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

For the Manchurian Sauce

    Sauté Aromatics

    In a separate pan, heat 2 tablespoons of oil over medium heat. Add finely chopped garlic, ginger, and green chilies. Sauté for 1-2 minutes until fragrant.

    Add the chopped onion and bell pepper to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly tender.

    Add Sauces

    Stir in soy sauce, tomato ketchup, chili sauce, and vinegar. Mix well and bring to a simmer.

    Combine with Cauliflower

    Once the sauce is well combined, add the fried cauliflower florets to the sauce. Toss gently to coat the florets evenly.

    Season with salt and black pepper to taste. Garnish with chopped spring onions before serving.
