Marinating the Goat

    Prepare Marinade

    In a large bowl, combine goat meat with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice. Mix well to coat the meat thoroughly.

    Add chopped coriander and mint leaves to the marinade. Mix again to ensure even distribution. Cover the bowl and let the meat marinate in the refrigerator for at least 2 hours, preferably overnight.

Cooking Rice

    Wash Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Boil Rice

    In a large pot, bring 6 cups of water to a boil. Add the soaked rice, whole spices, and salt. Cook until the rice is 70% cooked (it should still have a bite). Drain the rice and set aside.

Cooking Goat

    Brown the Marinated Goat

    In a heavy-bottomed pot, heat ghee over medium heat. Add the marinated goat mixture and sauté until the meat is browned and cooked through, about 15-20 minutes. Stir occasionally to prevent sticking.

Layering and Final Cooking

    Layer Biryani

    In the pot with the cooked goat, layer half of the partially cooked rice over the meat. Top with half of the fried onions, followed by the remaining rice. Finish with the remaining fried onions.

    Saffron Milk

    Dissolve saffron strands in warm milk and drizzle over the top layer of rice.

    Final Cook

    Cover the pot with a tight-fitting lid or seal with dough. Cook on low heat for about 30-40 minutes, allowing the flavors to meld and the rice to finish cooking.

Serving

    Once cooked, gently fluff the biryani with a fork and serve hot, garnished with additional fried onions and fresh herbs if desired.
