    Prepare the Eggs

    Boil the eggs in water for 10-12 minutes. Once done, cool them in cold water, peel, and set aside.

    Chop the Vegetables

    Finely chop the onion, tomato, and green chilies. Set aside.

Cooking

    Heat Oil

    In a pan, heat 2 tablespoons of oil over medium heat.

    Sauté Onions and Spices

    Add chopped onions and sauté until they turn golden brown. Add the ginger-garlic paste, green chilies, and curry leaves. Cook for 2-3 minutes.

    Add Tomatoes and Spices

    Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften.

    Combine Eggs and Simmer

    Add the boiled eggs to the curry sauce, gently stirring to coat them. Pour in 1 cup of water and bring to a simmer. Let it cook for 5-7 minutes.

    Finish with Garam Masala

    Sprinkle garam masala and cook for an additional 2 minutes. Remove from heat.
