Prepare the Rice
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.

Add Tomatoes and Spices
Add chopped tomatoes and ginger-garlic paste to the pot. Sauté for another 3-4 minutes until the tomatoes soften. Then add biryani masala, turmeric powder, red chili powder, and salt. Cook for 2 minutes.

Cook the Rice
Add the soaked basmati rice to the pot and stir gently to coat with the spices. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.

Add Boiled Eggs
Once the rice is cooked, gently cut the boiled eggs in half and place them on top of the rice. Cover and let it sit for another 5 minutes to incorporate flavors.

Gently fluff the biryani with a fork. Garnish with chopped cilantro, mint leaves, and fried onions.
