Marinated Chicken

Rice

Biryani Spices

Method

Marinating Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice.

  2. 2

    Marinate the Chicken

Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking Rice

  1. 3

    Rinse the Rice

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

  2. 4

    Cook the Rice

In a pot, bring 4 cups of water to a boil. Add salt and the rinsed rice. Cook until the rice is about 70% cooked, then drain and set aside.

Preparing the Biryani

  1. 5

    Cook the Onions

In a large pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown.

  2. 6

    Add the Chicken

Stir in the marinated chicken and cook until the chicken is browned and cooked through.

  3. 7

    Incorporate the Biryani Spices

Add cinnamon stick, cloves, and cardamom pods to the pot and sauté for a couple of minutes to release their flavors.

  4. 8

    Add Tomatoes and Herbs

Stir in the chopped tomato, cilantro, and mint leaves. Cook for a few more minutes until the tomatoes are soft.

  5. 9

    Layer the Rice

Spread the partially cooked rice evenly over the chicken mixture. Cover the pot with a tight-fitting lid.

  6. 10

    Steam the Biryani

Cook on low heat for about 20-25 minutes, allowing the rice to finish cooking and absorb the flavors.

Serving

  1. 11

    Serve the Biryani

Gently fluff the biryani before serving. Serve hot with raita or salad on the side.
