Soak Ingredients
In a bowl, soak rice, urad dal, and fenugreek seeds together in water for about 4-6 hours or overnight.

Drain and Blend
After soaking, drain the water and transfer the mixture to a blender. Add 1 cup of fresh water and blend until you get a smooth batter.

Ferment the Batter
Transfer the blended batter to a large bowl, cover it, and let it ferment in a warm place for 8-12 hours until it doubles in size.

Add Salt
Once fermented, add salt to the batter and stir well to combine.
Uttapam Cooking

Prepare Toppings
In a bowl, mix grated cheese, chopped onion, chopped tomato, chopped green chili, and chopped coriander leaves. Set aside.

Heat the Pan
Heat a non-stick skillet or tawa over medium heat and add a little oil to coat the surface.

Immediately sprinkle the topping mixture evenly over the uttapam while it is still wet.

Cook the Uttapam
Cook for about 3-4 minutes until the underside is golden brown. Drizzle a little oil around the edges.

Carefully flip the uttapam using a spatula and cook the other side for an additional 2-3 minutes until golden and cooked through.

Remove the uttapam from the skillet and serve hot with coconut chutney or sambar.
