Prepare Dosa Batter

    Soak Ingredients

    In a bowl, soak the rice, urad dal, and fenugreek seeds in water for at least 4 hours or overnight.

    Blend Batter

    Drain the soaked ingredients and blend them in a mixer with the 3 cups of water until a smooth batter forms. The batter should be of pouring consistency.

    Ferment Batter

    Transfer the batter to a large bowl, cover it, and let it ferment in a warm place for 8-12 hours until it has risen and has a slightly sour smell.

    Add Salt

    Once fermented, add salt to the batter and mix well.

    In a bowl, combine the grated cheese, chopped onion, chopped cilantro (if using), and black pepper. Mix until well combined.

Cook Dosa

    Heat Pan

    Heat a non-stick skillet or cast-iron pan over medium heat and add 1 tablespoon of oil or ghee.

    Pour Batter

    Once the pan is hot, pour a ladleful of dosa batter onto the pan and quickly spread it in a circular motion to form a thin layer.

    Add Filling

    As the dosa cooks and the edges start to lift, sprinkle a portion of the cheese filling onto one half of the dosa.

    Fold and Serve

    Once the cheese melts and the dosa is golden brown, fold it in half and serve hot with chutney or sambar.

    Repeat the process with the remaining batter and filling, adding more oil to the pan as needed.
