    Soak and Cook Chickpeas

    If using dried chickpeas, soak them overnight in water. Drain and rinse. Cook the soaked chickpeas in a pressure cooker with enough water for about 20 minutes until tender. If using canned chickpeas, rinse and drain them.

    Chop Vegetables

    Finely chop the onion, tomatoes, garlic, ginger, and green chili.

    Sauté Onions

    In a large pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then, add the chopped onions and sauté until they turn golden brown.

    Add Ginger, Garlic, and Chili

    Stir in the chopped garlic, ginger, and green chili. Cook for 2-3 minutes until fragrant.

    Add Tomatoes and Spices

    Add the chopped tomatoes to the pan. Cook until the tomatoes soften. Then, add coriander powder, turmeric powder, red chili powder, and salt. Stir well to combine.

    Combine Chickpeas

    Add the cooked chickpeas and water to the pan. Mix well to coat the chickpeas with the spices. Bring to a simmer and let it cook for 10-15 minutes.

    Finish with Garam Masala

    Stir in the garam masala and cook for an additional 5 minutes. Adjust seasoning if necessary.

Serving

    Garnish and Serve

    Remove from heat and garnish with chopped cilantro. Serve hot with rice or bread of your choice.
