    Prepare the Ingredients

    Peel and dice the potatoes into small cubes. Finely chop the onion, garlic, and ginger. Dice the tomatoes.

    Sauté the Base

    In a large pan, heat the cooking oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

    Add Onion and Spices

    Add the chopped onion to the pan and sauté until golden brown. Then add the garlic and ginger, cooking for an additional minute. Stir in the turmeric, coriander powder, red chili powder, and salt.

    Incorporate Tomatoes

    Add the diced tomatoes to the pan and cook until they soften and break down into a gravy.

    Cook Potatoes

    Add the diced potatoes to the tomato gravy, stir well and cook for 5 minutes.

    Add Water and Peas

    Pour in the 2 cups of water and bring to a boil. Once boiling, reduce to a simmer and add the green peas.

    Cover the pan and let simmer for about 15-20 minutes, or until the potatoes are tender.

    Once cooked, sprinkle with garam masala, stir well, and adjust salt to taste. Cook for an additional 2-3 minutes.
