    Prepare the Vegetables

    Wash and cut the cauliflower into florets. Peel and dice the potatoes into medium-sized cubes. Thinly slice the onion and chop the tomato.

Cooking

    Caramelize Onions

    In a large pan, heat the vegetable oil over medium heat. Add the sliced onions and sauté until they become golden brown and caramelized, about 10-15 minutes.

    Add Spices

    Add the cumin seeds and let them sizzle for a few seconds. Then, add the turmeric powder, coriander powder, salt, and black pepper. Stir to combine the spices with the onions.

    Cook Tomatoes

    Add the chopped tomatoes to the pan and cook for about 5 minutes, until the tomatoes break down and form a sauce.

    Add Cauliflower and Potatoes

    Stir in the cauliflower florets and diced potatoes. Mix well to coat the vegetables with the spice mixture.

    Add Water

    Pour in 1 cup of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 20-25 minutes or until the vegetables are tender.

    Finish with Garam Masala and Cilantro

    Once the vegetables are cooked, sprinkle the garam masala and chopped cilantro over the top. Gently stir to combine and cook for an additional 5 minutes.
