Making Vanilla Ice Cream

Prepare the Base
In a medium saucepan, whisk together the heavy cream, whole milk, sugar, and salt. Heat over medium heat until the mixture is hot but not boiling.

Temper the Egg Yolks
Slowly pour about a cup of the hot cream mixture into the yolks while whisking constantly to temper them, then pour the yolk mixture back into the saucepan with the remaining cream mixture.

Cook the Mixture
Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let it boil.

Chill the Base
Remove from heat and stir in the vanilla extract. Pour the mixture into a bowl and cover with plastic wrap. Chill in the refrigerator for at least 4 hours or overnight.

Churn the Ice Cream
Once the base is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm before serving.
