    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a large saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes until golden and bubbly. Gradually whisk in the milk, continuing to stir until the mixture thickens (about 5-7 minutes).

    Add the Cheese

    Remove the saucepan from heat and stir in the grated Fontina and aged white cheddar cheeses, salt, black pepper, and paprika until the cheeses are melted and the sauce is smooth.

    Combine Pasta and Sauce

    Add the drained macaroni to the cheese sauce, stirring to combine until the pasta is evenly coated.

    Prepare for Baking

    Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish.

    Add Topping and Bake

    Sprinkle the bread crumbs evenly over the top of the macaroni and cheese. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
