Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thick strips (about 1/4 inch wide) to make hand-cut fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Season the Fries
Drain the soaked fries and pat them dry with a clean towel. Toss them in a large bowl with malt vinegar and smoked salt until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.

Make the Garlic Aioli
In a bowl, mix together mayonnaise, minced garlic, lemon juice, olive oil, and salt to taste. Whisk until smooth and well combined.

Once the fries are cooked, remove them from the oven and serve hot with garlic aioli on the side for dipping.
