    Prepare the Brisket

    Preheat your oven to 325°F (160°C). Season the brisket with salt, black pepper, and thyme. Set aside.

    Sauté the Onions and Garlic

    In a large oven-safe pot, heat some oil over medium heat. Add the onions and sauté until translucent. Stir in the minced garlic and cook for another minute.

    Brown the Brisket

    Push the onions to the side and add the brisket to the pot. Sear it on both sides until nicely browned.

    Add Liquids and Vegetables

    Pour in the beef broth and red wine. Add brown sugar, carrots, and potatoes. Bring to a simmer.

    Cook the Brisket

    Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours, or until the brisket is tender.

    Rest and Serve

    Remove the pot from the oven and let the brisket rest for 20 minutes before slicing. Serve with the vegetables and sauce spooned over the top.
