    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until set, then remove from oven and let cool.

    Make the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the remaining 1/4 cup sugar, sour cream, and vanilla extract, mixing until well combined. Add the eggs, one at a time, mixing on low speed until just incorporated. Finally, stir in the lemon juice.

    Combine and bake

    Pour the cheesecake filling over the cooled graham cracker crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.

    Cool and serve

    Remove the cheesecake from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving. Release the sides of the springform pan, slice, and enjoy!
