    Prepare the Ingredients

    Clean the mussels under cold running water, scrubbing the shells to remove any dirt or debris. Remove the beards. Chop the scallions, and mince the garlic. Slice the red chili pepper and chop the bacon into small pieces.

    Cook the Bacon

    In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon from the pot and set aside, leaving the rendered fat in the pot.

    Sauté Vegetables

    In the same pot, add the minced garlic, chopped scallions, and sliced red chili pepper. Sauté for about 2-3 minutes until fragrant.

    Add Corn and Broth

    Add the sweet corn kernels and vegetable broth to the pot. Bring to a simmer and let cook for 5 minutes to allow the flavors to meld.

    Cook the Mussels

    Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

    Finish the Dish

    Stir in the crispy bacon and season with salt and black pepper to taste. Serve hot with toasted garlic bread on the side.
