    Step 1: Make the Budino Base

    In a separate bowl, whisk together egg yolks, cornstarch, vanilla extract, and salt. Gradually add the hot chocolate mixture to the egg yolk mixture, whisking constantly to avoid curdling. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened (about 5-7 minutes). Pour into serving cups and refrigerate until set (about 2-3 hours).

    Step 2: Make the Chocolate Amaro Mousse

    In a small saucepan, heat heavy cream until just simmering. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth. Stir in amaro liqueur and sugar. Let cool slightly.

    Step 3: Whip Egg Whites

    In a clean bowl, whip egg whites until stiff peaks form. Gently fold the cooled chocolate mixture into the whipped egg whites until combined. Spoon the mousse over the chilled budino in each serving cup.

Finishing Touches

    Top each budino with chopped English toffee, toasted hazelnuts, and a sprinkle of sea salt. Serve immediately or refrigerate until ready to serve.
