    Roast the Beets

    Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil with a drizzle of olive oil, salt, and pepper. Place on a baking sheet and roast for about 45-60 minutes, or until tender when pierced with a fork. Let cool, then peel and slice the beets.

    Prepare the Spicy Honey

    In a small bowl, combine honey and red pepper flakes. Adjust the amount of red pepper flakes according to your spice preference.

    Plate the Dish

    Arrange the sliced beets on a serving platter. Crumble the chèvre over the beets, drizzle with spicy honey, and sprinkle with fresh thyme and walnuts, if using.
