    Prepare the Fries

    Peel and cut the potatoes into fries. Rinse them in cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then toss with minced garlic, fresh herbs, salt, and pepper.

    Cook the Steak

    Season the flat iron steak with salt and pepper on both sides. Heat a skillet or grill over medium-high heat. Add a tablespoon of olive oil and cook the steak for about 4-5 minutes on each side for medium-rare, or to desired doneness. Remove from heat and let rest for 5 minutes.

    Make the Compound Butter

    In a bowl, combine softened unsalted butter, minced garlic, fresh herbs, and lemon juice. Mix until well combined and form into a log. Wrap in plastic wrap and refrigerate until firm.

    Optional Shrimp

    In a separate skillet, heat olive oil over medium heat. Add shrimp, season with salt, pepper, and lemon juice, and cook until shrimp are pink and opaque, about 3-4 minutes.

    Serve

    Slice the rested steak and serve with the garlic and herb fries. Top the steak with a slice of compound butter. Optionally, serve shrimp alongside.
