Prepare the Pork Belly
Preheat your smoker to 225°F (107°C). Rub the pork belly with salt and pepper, then smoke it for about 6 hours or until it reaches an internal temperature of 195°F (90°C). Let it rest for 30 minutes before slicing.

Cook the Fries
While the pork belly is smoking, prepare the fries according to the package instructions if using frozen, or fry them if making homemade. Aim for a crispy texture.

Assemble the Loaded Fries
In a large serving dish, layer the fries, chopped smoked pork belly, shredded Swiss cheese, and bread and butter jalapenos. Drizzle BBQ sauce over the top.

Place the assembled fries under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Serve immediately.
