Prepare the Cookie Dough
Preheat the oven to 350°F (175°C). In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

Cream the Butter and Sugars
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine and Bake
Gradually add the dry ingredients to the wet mixture. Mix until just combined. Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are firm. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Assemble the Ice Cream Sandwiches
Once the cookies are completely cool, scoop your choice of seasonal ice cream onto the flat side of one cookie. Top with another cookie, pressing gently to create a sandwich. Repeat with the remaining cookies and ice cream.

Place the assembled ice cream sandwiches in the freezer for at least 30 minutes to firm up. Serve chilled and enjoy!
