Prepare the Pork Belly
Trim excess fat from the pork belly, leaving about 1/4 inch of fat. Cut the pork belly into 1-inch cubes.

Make the Rub
In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and liquid smoke. Rub this mixture all over the pork belly cubes.

Smoke the Pork Belly
Preheat your smoker to 225°F (107°C). Place the seasoned pork belly cubes on the smoker grates and smoke for 4-5 hours, or until they are tender and have a nice bark.

Cube and Sauce
Remove the smoked pork belly from the smoker and cut each cube into smaller pieces, about 1/2 inch. Toss the cubes in BBQ sauce.

Final Smoke
Return the sauced burnt ends to the smoker and cook for an additional 1-2 hours at 275°F (135°C), allowing the sauce to caramelize.

Remove from the smoker and let rest for a few minutes before serving. Enjoy your smoky, sweet burnt ends!
