Prepare the Dough
In a mixing bowl, combine flour, cocoa powder, powdered sugar, and salt. Add softened butter and mix until crumbly. Add egg yolk and ice water, then mix until a dough forms.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Pre-bake the Crust
Roll out the chilled dough and fit it into a tart pan. Pre-bake at 350°F (175°C) for 10-15 minutes until set.
Chocolate Filling

Melt the Chocolate
In a saucepan, heat the heavy cream until just simmering. Pour it over the chopped dark chocolate and let it sit for a few minutes. Stir until smooth.

Bake the Tart
Pour the filling into the pre-baked tart crust. Bake at 350°F (175°C) for 20-25 minutes until the filling is set but still slightly soft in the center.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat until it thickens slightly. Do not boil.

Chill and Flavor
Remove from heat, stir in oak extract and salt. Chill the mixture in the refrigerator for at least 2 hours.

Churn the Ice Cream
Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
