Prepare the Broad Beans

Blanch the shelled broad beans in boiling water for about 2 minutes. Drain and cool them in ice water. Once cooled, remove the outer skins to reveal the tender beans.

Steam the Plaice

Season the Cornish plaice fillets with salt and black pepper. Place the fillets in a steamer basket and steam over boiling water for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

Crush the Broad Beans

In a bowl, crush the blanched broad beans with a fork. Drizzle with olive oil and mix in the chopped nasturtium and lemon balm leaves. Season with salt and pepper to taste.

Serve

Plate the steamed plaice and top with the crushed broad beans mixture. Garnish with lemon wedges and additional nasturtium leaves if desired.
