Method

Bread Preparation

  1. 1

    Prepare the Dough

In a large mixing bowl, combine water, yeast, and sugar. Let it sit for 10 minutes until frothy. Gradually add flour, salt, and olive oil. Mix until a dough forms.

  2. 2

    Kneading

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  3. 3

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  4. 4

    Shaping

Punch down the dough and shape it into loaves or rolls. Place them on a baking sheet lined with parchment paper.

  5. 5

    Second Rise

Cover the shaped dough and let it rise for another 30 minutes.

  6. 6

    Baking

Preheat the oven to 375°F (190°C). Bake the bread for 25-30 minutes or until golden brown.

Viennoiseries Preparation

  1. 7

    Activate Yeast

In a bowl, warm the milk and dissolve 2 tsp of sugar. Stir in the yeast and let it sit for 5-10 minutes until bubbly.

  2. 8

    Make the Dough

In a large bowl, combine flour, remaining sugar, and salt. Add the yeast mixture, eggs, vanilla, and melted butter. Mix until a dough forms.

  3. 9

    Kneading

Knead the dough on a floured surface for about 8-10 minutes until smooth.

  4. 10

    First Rise

Place the dough in a greased bowl, cover, and let it rise for about an hour or until doubled in size.

  5. 11

    Shaping

Roll out the dough and shape into desired forms (croissants, danishes, etc.).

  6. 12

    Second Rise

Let the shaped dough rise for an additional 30-45 minutes.

  7. 13

    Baking

Preheat the oven to 375°F (190°C) and bake for 15-20 minutes until golden brown.
