Prepare the Fruit
Wash the fresh seasonal fruit thoroughly. If using strawberries, remove the stems and slice them. For peaches, peel and chop them into small pieces.

Cook the Mixture
In a large pot, combine the prepared fruit, granulated sugar, and lemon juice. Stir well and let it sit for about 30 minutes to allow the fruit to macerate.

Add Pectin
After the fruit has macerated, add the pectin to the mixture and bring it to a boil over medium heat, stirring constantly.

Simmer and Thicken
Once boiling, reduce heat and let it simmer for about 10-15 minutes, or until the mixture thickens to your desired consistency.

Jar and Store
Pour the hot preserves into sterilized jars, leaving a little space at the top. Seal the jars tightly and let them cool before storing in the refrigerator.
