Duck Preparation

Prepare the Duck
Preheat the oven to 375°F (190°C). Pat the dry-aged duck dry with paper towels and season generously with salt and black pepper. Rub olive oil all over the duck.

Prepare Smoked Almond Praline
In a saucepan over medium heat, combine sugar and water. Stir until the sugar dissolves. Allow it to cook undisturbed until it turns a golden brown color. Quickly stir in the chopped smoked almonds and pour onto a parchment-lined baking sheet. Let it cool and harden.
Roasting the Duck

Roast the Duck
Place the stuffed duck on a roasting rack in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste occasionally with the drippings.

Serve the Duck
Once cooked, let the duck rest for 10 minutes before carving. Serve with the homemade sausage and sprinkle with the smoked almond praline.
