Prepare the Pork Belly
Score the skin of the pork belly in a crosshatch pattern. Rub salt and black pepper all over the pork belly, ensuring it gets into the scored areas.

Sauté Aromatics
In a large skillet over medium heat, add a little oil and sauté minced garlic and chopped onion until fragrant and translucent.

Slow Cook
Transfer the sautéed aromatics to a slow cooker. Place the seasoned pork belly on top. Add apple cider vinegar, chicken broth, and brown sugar. Cover and cook on low for 8-10 hours or until the pork is tender.

Make Apple Sauce
While the pork belly is cooking, peel and core 4 medium apples, then chop them. In a saucepan, add the chopped apples, a little water, and sugar to taste. Cook on medium heat until the apples are soft. Mash to desired consistency.

Serve
Once the pork belly is done, remove it from the slow cooker and let it rest for a few minutes. Slice into portions and serve with the homemade apple sauce.
