Ice Cream Preparation

    Infuse Cream

    In a saucepan, heat the heavy cream, whole milk, sugar, and salt over medium heat until the sugar dissolves. Remove from heat, add lemon verbena leaves, and let infuse for 30 minutes.

    Strain and Freeze

    Strain the mixture to remove the lemon verbena leaves. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. Freeze until firm.

Oat Cake Preparation

    Mix Ingredients

    Preheat the oven to 350°F (175°C). In a bowl, combine rolled oats, flour, baking powder, and brown sugar. In another bowl, whisk together melted butter, milk, egg, and vanilla extract.

    Bake the Cake

    Combine the wet and dry ingredients. Pour the batter into a greased baking dish and bake for 20-25 minutes or until golden and a toothpick comes out clean.

Assembly

    Once the oat cake is cooled, cut it into squares. Serve topped with a scoop of meadow hay ice cream, fresh strawberries, and a drizzle of honey.
