Custard Preparation

    Infuse the Milk

    In a saucepan, combine the milk, heavy cream, bay leaves, and sugar. Heat over medium heat until it just begins to simmer, then remove from heat and let the bay leaves steep for 15 minutes.

    Mix the Egg Yolks

    In a bowl, whisk together the egg yolks, lime zest, lime juice, and a pinch of salt.

    Combine and Cook

    Remove the bay leaves from the milk mixture. Slowly whisk the warm milk mixture into the egg yolk mixture. Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly until thickened, about 10 minutes. Do not let it boil.

    Chill

    Once thickened, remove from heat and pour the custard into serving dishes. Refrigerate until set, about 2 hours.

Meringue Preparation

    Whip Egg Whites

    In a clean, dry bowl, beat the egg whites with an electric mixer until soft peaks form.

    Add Sugar

    Gradually add the granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy. Stir in the vanilla extract.

    Toast Meringue

    Spread the meringue over the chilled custard. Use a kitchen torch or place under a broiler to toast the meringue until golden brown.

Serving

    Garnish and Serve

    Top the toasted meringue with crushed lime zest and fresh mint leaves before serving.
