    Rub the Herdwick lamb shoulder with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Let it marinate for at least 1 hour at room temperature.

    Prepare your charcoal grill for direct heat cooking. Ensure the charcoal is hot and ashed over before placing the lamb on the grill.

    Place the marinated lamb shoulder on the grill and cook for about 1.5 to 2 hours, turning occasionally to achieve even cooking. Use a meat thermometer to ensure it reaches an internal temperature of 60°C (140°F) for medium-rare.

    While the lamb is grilling, finely chop the smoked anchovies and set aside.
