    Prepare the Pickled Blackberries

    In a saucepan, combine white vinegar, sugar, and salt. Bring to a boil, then pour over blackberries in a jar. Let cool and refrigerate for at least 1 hour.

    Make the Charcoal Dressing

    In a small bowl, mix activated charcoal powder, soy sauce, and rice vinegar until smooth. Set aside.

    Prepare the Beef Tartare

    Finely chop the dry-aged beef and place it in a mixing bowl. Add egg yolk, capers, shallots, Dijon mustard, and olive oil. Mix well to combine.

    Plate the Dish

    Using a ring mold, shape the beef tartare on a plate. Drizzle with charcoal dressing and top with pickled blackberries. Garnish with wasabi leaves.
