Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.

Beat the Egg Whites
In another bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue to beat until the mixture is glossy and stiff peaks form.

Combine the Mixtures
Gently fold the melted chocolate into the whipped cream until combined. Then, carefully fold in the beaten egg whites in three additions, being cautious not to deflate the mixture.

Add Vanilla
Stir in the vanilla extract until evenly distributed.

Chill the Mousse
Spoon the mousse into individual serving dishes or glasses. Refrigerate for at least 2 hours, or until set.

Serve with Berries and Mint
Before serving, top each mousse with fresh berries and garnish with mint leaves.
