Caviar and Accompaniments

Method

Preparation and Assembly

  1. 1

    Pickle the Shallots

In a small saucepan, combine vinegar, sugar, and salt. Heat until sugar dissolves. Slice shallots thinly and place in a jar. Pour the vinegar mixture over the shallots and let sit for at least 30 minutes.

  2. 2

    Prepare the Spring Onions

Wash and finely chop the spring onions, separating the white parts from the green tops.

  3. 3

    Toast the Crystal Bread

Preheat the oven to 180°C (350°F). Brush the crystal bread slices with olive oil and place them on a baking sheet. Toast in the oven for about 5-7 minutes, or until golden and crispy.

  4. 4

    Assemble the Dish

On a serving platter, place a dollop of crème fraîche. Top with a spoonful of caviar, a sprinkle of chopped spring onion whites, and some pickled shallots. Garnish with the green tops of spring onions.

  5. 5

    Serve

Serve the caviar mixture alongside the toasted crystal bread for dipping and spreading.
