Preparation of Batter

    Heat the Milk

    In a saucepan, heat the whole milk until it's warm but not boiling. Remove from heat.

    Mix Dry Ingredients

    In a mixing bowl, whisk together the flour, sugar, and salt.

    Combine Wet Ingredients

    In another bowl, whisk the eggs, egg yolks, vanilla extract, and dark rum until well combined.

    Combine Mixtures

    Pour the warm milk into the egg mixture, then gradually add the flour mixture, whisking until smooth. Cover and let it rest in the refrigerator for at least 24 hours.

Coating the Molds

    Melt Beeswax

    In a double boiler, melt the beeswax with the unsalted butter until fully liquefied.

    Coat the Molds

    Using a brush, coat the inside of each canelé mold with the melted beeswax mixture. Ensure a good layer for a crispy exterior.

Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Fill the Molds

    After the batter has rested, pour it into the coated molds, filling each about 2/3 full.

    Bake

    Bake in the preheated oven for about 45-50 minutes, or until the canelés are deep brown and firm to the touch.

    Cool

    Remove from the oven and let them cool in the molds for 10 minutes before unmolding them.
