Canelé Preparation

    Prepare the Molds

    Melt the beeswax and coat the inside of the canelé molds with it. Allow them to cool and harden while you prepare the batter.

    Make the Batter

    In a saucepan, heat the whole milk until just boiling. Remove from heat and let it cool slightly. In a mixing bowl, whisk together the sugar, flour, eggs, and egg yolks until smooth. Gradually add the warm milk, whisking continuously. Stir in the vanilla extract and dark rum.

    Chill the Batter

    Cover the batter and refrigerate for at least 24 hours to develop the flavors.

    Preheat the Oven

    Preheat your oven to 450°F (230°C).

    Fill the Molds

    Once the batter has rested, fill the prepared canelé molds to the top.

    Bake

    Place the molds in the preheated oven and bake for about 45-60 minutes, or until the canelés are deeply browned and caramelized on the outside.

    Cool and Unmold

    Allow the canelés to cool in the molds for about 10 minutes, then carefully remove them and let them cool completely on a wire rack.
