    Prepare the Beef

    Season the beef fillet with salt and black pepper. Heat olive oil in a pan over high heat and sear the fillet on all sides until browned. Remove from pan and let it cool. Brush with Dijon mustard.

    Make the Mushroom Duxelles

    In the same pan, add finely chopped mushrooms and thyme. Cook until the moisture has evaporated and the mixture is dry. Season with salt and pepper. Let it cool.

    Assemble the Wellington

    Lay out prosciutto slices on a piece of cling film, slightly overlapping. Spread the mushroom duxelles over the prosciutto. Place the beef on top and roll tightly using the cling film. Chill for 30 minutes.

    Wrap in Puff Pastry

    Roll out the puff pastry on a floured surface. Unwrap the beef from the cling film and place it in the center of the pastry. Fold the pastry over the beef, sealing the edges. Brush with egg yolk.

    Bake

    Preheat the oven to 200°C (400°F). Place the wrapped Wellington on a baking sheet and bake for 25-30 minutes or until golden brown. Let it rest for 10 minutes before slicing.
