Preparation

1. Prepare the Gooseberry & Elderflower Sauce

In a saucepan, combine the gooseberries, elderflower cordial, and lemon juice. Cook over medium heat until the gooseberries are soft, about 10 minutes. Remove from heat and stir in butter until melted and smooth. Set aside.

2. Prepare the Seaweed Caviar Butter Sauce

In a small saucepan, melt the unsalted butter over low heat. Add the seaweed caviar and fresh dill, stirring until combined. Season with salt and black pepper to taste. Keep warm.

Preheat your grill or barbecue. Brush the scallops with olive oil and season with salt and black pepper. Grill the scallops for 2-3 minutes on each side, until they are opaque and cooked through.
