Stuff the Patties
While the patties are still on the grill or in the pan, place a generous scoop of the jalapeño cream cheese mixture on top of one patty and cover it with the other patty. Cook for an additional 2-3 minutes to allow the cream cheese to warm and melt slightly.

In the last minute of cooking, place the pepper jack cheese on top of the stuffed patties and cover to melt the cheese.

Toast the Buns
While the cheese is melting, toast the sourdough buns on the grill or in a toaster until golden brown.

Assemble the Burger
Place the stuffed patties on the toasted sourdough buns. Top with shredded lettuce, slices of fresh jalapeños, and drizzle with honey-chipotle sauce. Close the buns and serve immediately.
