Pulled Pork Preparation

    Prepare the Pork

    Rub the pork shoulder with smoked paprika, garlic powder, onion powder, salt, and black pepper. Ensure the pork is evenly coated with the spices.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and cook for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Mix BBQ Sauce

    In a bowl, combine BBQ sauce and apple cider vinegar. Mix well and set aside.

    Shred the Pork

    Once the pork is done, remove it from the smoker and let it rest for 30 minutes. Use two forks to shred the pork into bite-sized pieces.

    Combine with Sauce

    Mix the shredded pork with the prepared BBQ sauce until well coated.

    Prepare the Slaw

    You can prepare a house-made slaw by mixing shredded cabbage, carrots, mayonnaise, apple cider vinegar, salt, and pepper in a separate bowl.

    Toast the sourdough buns. Layer the pulled pork on the bottom half of the bun, top it with the slaw, and drizzle with spicy aioli if desired. Place the top half of the bun to complete the sandwich.
