    Prepare the Aioli

    In a small bowl, mix together the mayonnaise, minced garlic, salt, black pepper, and hot sauce if using. Set aside.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions, bell pepper, and mushrooms. Sauté until the vegetables are softened and caramelized, about 8-10 minutes. Remove from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Thinly slice the ribeye steak against the grain and add it to the skillet. Season with salt and pepper. Cook for about 5-7 minutes until the steak is browned and cooked to your liking.

    Combine and Melt Cheese

    Add the sautéed vegetables back into the skillet with the steak. Stir to combine. Top with mozzarella cheese and cover the skillet to allow the cheese to melt, about 2-3 minutes.

    Assemble the Sandwich

    Slice the hoagie buns open and toast them lightly if desired. Spoon the steak and cheese mixture into each hoagie bun. Drizzle with the garlicky aioli before serving.
