Prepare the Cookie Dough
In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, rolled oats, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined. Fold in the chocolate chips.

Grill the Cookie
Preheat your grill to medium heat. Place a large piece of parchment paper on a baking sheet and spread the cookie dough evenly on top, about 1 inch thick. Transfer the parchment paper with the cookie dough onto the grill. Close the grill lid and cook for about 15-20 minutes, or until the edges are golden brown and the center is set.

Serve the Grilled Cookie
Remove the cookie from the grill and let it cool slightly. Cut into wedges and serve warm topped with vanilla ice cream, drizzled with chocolate syrup, and a dollop of whipped cream.
