Caramelize the Onions
In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, until onions are golden brown and caramelized, about 15-20 minutes.

Prepare the Beef
In a separate skillet, heat the shaved beef over medium-high heat. Season with salt and pepper to taste. Cook until heated through, about 5-7 minutes.

Assemble the Sandwiches
Preheat your oven to 350°F (175°C). Slice the hoagie buns open, and layer the shaved beef, caramelized onions, and Swiss cheese inside each bun.

Melt the Cheese
Place the assembled sandwiches on a baking sheet and toast in the preheated oven for about 5-7 minutes, or until the cheese is melted and the buns are slightly crispy.

Prepare the Au Jus
While the sandwiches are toasting, heat the beef broth in a small saucepan over medium heat until simmering. Adjust seasoning with salt and pepper if desired.
