Cobbler

Method

Preparation

  1. 1

    Prepare the Peaches

Preheat your oven to 350°F (175°C). Peel and slice the fresh peaches, then place them in a large bowl. Add ½ cup of granulated sugar and toss to combine. Let the peaches sit for about 10 minutes to release their juices.

  2. 2

    Make the Cobbler Batter

In another bowl, mix together the remaining ½ cup of sugar, flour, baking powder, and salt. In a separate bowl, whisk together the milk, melted butter, and vanilla extract. Combine the wet and dry ingredients until just mixed.

  3. 3

    Assemble the Cobbler

In a greased 9x13-inch baking dish, pour the batter evenly over the bottom. Spoon the peach mixture over the batter, making sure to include the juices.

  4. 4

    Bake the Cobbler

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

  5. 5

    Prepare the Bourbon Glaze

While the cobbler is baking, prepare the bourbon glaze by combining ¼ cup of bourbon, ¼ cup of sugar, and 2 tablespoons of butter in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture thickens slightly.

  6. 6

    Serve

Once the cobbler is finished baking, remove it from the oven and let it cool slightly. Drizzle the bourbon glaze over the top, sprinkle with toasted pecans, and serve warm with a scoop of vanilla ice cream.
