Prepare the Chicken
Rinse the chicken wings under cold water and pat them dry with paper towels. Place them in a large bowl.

Season the Wings
Sprinkle salt and black pepper over the wings. Toss to coat evenly.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil, making sure not to overcrowd the pot. Fry in batches for about 8-10 minutes, or until golden brown and crispy.

Drain the Wings
Remove the wings from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Choose Your Sauce
While the wings are still hot, toss them in your choice of sauce: hot, mild, medium, Old Bay, or BBQ.

Transfer the sauced wings to a serving platter and serve immediately with your favorite dipping sauce.
