Prepare the Quinoa

Rinse the quinoa under cold water to remove its natural bitterness. In a medium-sized pot, add the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

Chop the Vegetables

While the quinoa is cooking, chop the zucchini, bell peppers, and cherry tomatoes into bite-sized pieces. Rinse the spinach under cold water and drain.

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped zucchini and bell peppers, and sauté for about 5 minutes until they begin to soften.

Add the Spinach and Tomato

Stir in the spinach and cherry tomatoes, cooking for an additional 3-4 minutes until the spinach wilts and the tomatoes start to burst.

Incorporate Chickpeas

Add the drained chickpeas to the skillet. Sprinkle with garlic powder, salt, black pepper, and Italian herbs. Stir to combine and cook for another 2-3 minutes.

Combine with Quinoa

Once the quinoa is cooked, fluff it with a fork and then add it to the skillet with the sautéed vegetables and chickpeas. Stir everything together until well combined and heated through.

Remove from heat and serve warm. This dish can be garnished with fresh herbs or additional olive oil if desired.
