Fried Calamari

Prepare the Calamari
Rinse the cleaned calamari under cold water and pat dry with paper towels.

Prepare the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Coat the Calamari
Dip each calamari ring into the flour mixture, ensuring it is fully coated. Shake off any excess flour.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the calamari rings to the hot oil in batches, frying for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes
Stir in the crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally, until thickened.
Spicy Remoulade Sauce

Combine Ingredients
In a bowl, whisk together mayonnaise, Dijon mustard, hot sauce, lemon juice, paprika, garlic powder, and salt until smooth.

Chill the Sauce
Refrigerate the remoulade sauce for at least 15 minutes before serving to allow the flavors to meld.
