Main Ingredients
Method
Preparation
- 1
Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
- 2
Dredge in Flour
Spread the all-purpose flour on a plate and dredge each chicken breast in the flour, shaking off the excess.
Cooking
- 3
Heat the Oil and Butter
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until hot.
- 4
Cook the Chicken
Add the chicken breasts to the skillet in a single layer and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- 5
Make the Sauce
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
- 6
Add Capers
Stir in the capers and return the chicken to the skillet. Simmer for another 2-3 minutes to heat the chicken through and allow the flavors to meld.
- 7
Finish the Sauce
Add the remaining 2 tablespoons of butter to the sauce, stirring until melted and combined. Adjust seasoning with salt and pepper to taste.
Serving
- 8
Plate the Chicken
Transfer the chicken to a serving plate, spooning the sauce over the top.
- 9
Garnish
Sprinkle the chopped parsley on top for garnish before serving.
